Blue Cork Winery Cabernet Sauvignon Review: A Smooth, Oak-Aged New Jersey Red

Smooth texture. Classic Cabernet structure. Surprisingly versatile food pairings.

Those are the three things that stood out immediately when we sat down with Blue Cork Winery’s 2020 Cabernet Sauvignon—and they’re exactly why this New Jersey red was the perfect wine to kick off our year of focused tasting.

This year, my fiancé and I are intentionally working on improving our tasting skills, paying closer attention to how wines open up, evolve, and pair with food. Starting with a Cabernet Sauvignon felt right, and Blue Cork delivered a bottle that was both educational and genuinely enjoyable.

Letting the Wine Breathe

Once uncorked, we gave this 2020 vintage some time to breathe. As we continue learning, we’ve found that structured reds like Cabernet Sauvignon really benefit from a little patience. Allowing the wine to open helped soften the tannins and brought out more depth and balance in the glass.

Tasting Notes: Smooth with Just the Right Grip

Aged in French oak, this Cabernet Sauvignon was impressively smooth while still maintaining that classic Cabernet grip. The tannins were present but well-integrated, creating a silky texture that led into a long, lingering finish. Each sip felt polished and intentional, making it easy to slow down and really taste what was happening.

Aromas on the Nose

On the nose, both of us noticed a rich and layered aroma profile. Dark berries, plum, and dark cherry came through first, followed by earthy notes, subtle smokiness, and a hint of leather. It was one of those moments where we both landed on similar impressions—always a satisfying part of shared tasting.

Food Pairings: Unexpected but Perfect

Cabernet Sauvignon is known for pairing well with bold foods, and this one definitely fits the bill. While it would be excellent alongside a grilled strip steak or a thick, juicy burger topped with sautéed mushrooms and onions, we went in a different direction.

Our favorite pairing of the night? Milk chocolate.

A bite of chocolate followed by a sip of this Cabernet created a smooth, balanced, and surprisingly indulgent combination that just worked.
